Potato Salad With Eggs – Fresh Summer Salads, Perfect For Picnic Or at the Beach

Do you like potato salad? Do you find it delicious? If you do, awesome. If you don’t, try this anyway. Just do it.

You will, for the potato salad dish, need the following things:

6 eggs that have been hard boiled

6-8 red potatoes

1 bell pepper of any colour, that has been chopped

1-2 sliced carrots

1/3 sliced cucumber

1 cup broccoli flowerettes

4-6 chopped green onions

to taste, you need the usual – salt and pepper

For the dressing, you will need these things:

3/4 cup mayonnaise

1/4 cup mustard

2 tablespoon steak sauce (if you like it, otherwise possibly use another sauce or just nothing at all).

This is how you make this dish:

Begin with boiling the eggs – 8-10 minutes (in water that has been salted). Let them cool.

Wash – and, if desired, peel – potatoes. Cut into pieces the potatoes – pieces that are about 1 inch – and boil until cooked. Pour them into colander, rinse. Set aside, let cool.

Add, to a large bowl, carrots, cucumber, broccoli, green onion and bell pepper.

Take 4 of the hard boiled eggs, that should be cool – peel them, rinse them with cold water and slice into small slices. Add them to the bowl.

The potatoes, that should be cool by now, you chop and add to the mix in the bowl.

Mix into the bowl dressing. If you find the taste to be lacking add a little more steak sauce, mustard (or whatever you find spices things up).

To taste, add salt and pepper.

Play around with steak sauce – or whatever you found to spice things up – until you get the right taste. Now, after doing that, take the two remaining eggs – peel, slice and place them on top of the salad.

All that is left to do is, cover the salad, put it in a fridge for a few hours and eat it!
