Garbanzo Bean Salad – Fresh Summer Salads – Perfect For Picnic Or at the Beach
Do you like the occasional, or more than occasional, Greek salad? This isn’t actually going to be that, but if you do like some of the ingredients usually involved in that dish you are likely to enjoy what this dish has to offer you in the form of oral enjoyment (no, no, no…). Let’s talk a little about the recipe. Have you heard of the garbanzo bean..? If you haven’t, and really don’t like beans – because you find them ordinary – I completely understand that you do, and think I have an idea of why (you feel beans are ordinary). But, consider that if you haven’t heard of a bean – can it really be that ordinary? You haven’t even heard of it! At least in my mind, something you haven’t heard of cannot be ordinary.
Well, well – enough of the rambling. I’m going to present the recipe to you.
These are the ingredients required:
Red onion – 1/4 cup, chopped
Garbanzo beans – 1 can
Long english cucumber – 6inches/15centimeters
Bell pepper – 1/2, any colour
Olives – 1/2 cup, sliced
Feta cheese – 1/2 cup, crumbled
Salt – 1 teaspoon
Cherry/plum tomatoes – 8-12
For the dressing, accompanying this bean dish, you’ll be needing:
Olive oil – 3 tablespoon
Wine or cider vinegar – 3 tablespoon
Lime juice – 3 tablespoon
Cumin – 1 pinch
Oregano – 1 pinch
